ORIGIN: From our vineyard “I Cantoni” located in Novaia di Marano di Valpolicella in the province of Verona. A hilly vineyard (350 meters a.s.l.) of Valpolicella Classica, mainly exposed to South/South-East,tuffaceous and volcanic soil.

GRAPE-PICKING TIME AND METHOD:
Last ten days of September, manual picking of grapes. Slightly natural over-ripening in a traditional hilly cellar (400 meters above sea level) for about 30 days.
Gentle crushing and de-stemming of grapes. Fermentation at controlled temperature in small stainless steel tanks for 7/8 days. Maceration prior to fermentation at controlled temperature. Daily processing by delestage. Malolactic fermentation until completion in wood. Batonage on own yeasts in barrique. FINING:
18 months in barrel; 4 months in bottle.
AGEING AND CONSERVATION CAPACITY:
When well preserved it can enhance all its features in the 10 years and more following vintage. It is advisable to store bottles horizontally in a cool and dark place with constant humidity and temperature.
Deep ruby red wine. Clear and intense perfume with hints of red berries, together with spices and notes recalling dried grapes. Good alcoholic content, medium-low acidity, medium tannic features and good roundness. A wine with body and structure, flavour some, persistent and good balance.
